Found a solution that at least worked for me: Delete the install if it's still stuck. If you have an external HDD, turn it off, and then disconnect it. Restart the console. Put the disc back in to restart the install. When the 1.04 update comes up to say it has started downloading, immediately go and pause rhat update.

The way it works is that when you install a PS4 game on PS5, unless there's a PS5 patch released for a game, you will play the PS4 Pro version of said game. It'll just run slightly better.
